Fudgy Brownies! - UPDATE with new twist

These are such fantastic brownies. I tried someone's recipe the other week and didn't like them. They were more like eating cake and we like our brownies fudgy and gooey.

I saw this recipe in my mom's August Southern Living magazine. They are fantastic! They are so gooey that I store them upside down because the top has a slight crust that protects them better than the goo at the bottom.

So Good Brownies

4 1-oz. unsweetened chocolate baking squares
(I use the equivalent of 12 Tbsp. cocoa and 2 Tbsp. shortening)
3/4 c. butter or margarine
1 1/2 c. granulated sugar
1/2 c. brown sugar
3 large eggs
1 c. flour
1 tsp. vanilla extract
1/8 tsp. salt

1. Preheat oven to 350degrees. Line bottom and sides of 8" pan with aluminum foil, allowing 2-3 inches to extend over sides; lightly grease foil.

2. Microwave chocolate squares and butter in a large microwave-safe bowl at HIGH 1 1/2 to 2 minutes or until melted and smooth, stirring at 30-second intervals. (I melt it together in large saucepan on stovetop) Stir in granulated and brown sugars. Add eggs, 1 at a time, stirring just until blended after each addition. Stir in flour, vanilla and salt.

3. Pour mixture into prepared pan.

4. Bake at 350 degrees for 40-44 min. or until a wooden pick inserted in center comes out with a few moist crumbs. Cool completely on a wire rack (about 1 hour). Lift brownies from pan, using foil sides as handles. Gently removed foil, and cut brownies into 16 squares.

Enjoy and lick those fingers!

**UPDATE** I just saw that on the following page in Southern Living they have "Topping Upgrades" for the above brownie recipe. Like you can improve perfection, but we'll try, huh?

This is the one that I'll try first:
Peanut Butter Streusel Brownies:
Stir together 1/2 c. flour, 2 Tbsp. light brown sugar, 2 Tbsp. granulated sugar, 1/3 c. chunky peanut butter, 2 Tbsp. melted butter and 1/8 tsp. salt until blended and crumbly. Sprinkle peanut butter mixture over above batter. Increase bake time to 50-54 minutes. YOWZA!!!
